  1. In a medium saucepan, combine quinoa, water (or broth), leeks, garlic, and salt and bring to a boil. Cover and reduce heat, cooking for 15 minutes or until quinoa is fully cooked.

  2. Meanwhile, in a medium mixing bowl, mash white beans with a potato masher. Once quinoa is finished, add into the mashed beans and mix, Add in flour and stir until fully incorporated.

  3. Form into patties (I got about 6) and pull aside what you plan to cook. Freeze remaining patties on a lined baking sheet.

  4. To pan fry: place 1-2 tbsp of failsafe oil into your frying pan and cook over medium heat for 4-5 minutes per side or until beginning to brown. To bake: preheat oven to 375°F/190°C and bake for 30 minutes, flipping at the 15 minute mark.
