One Pot FAILSAFE Pasta with Chicken + Leeks

I’ve have been a huge fan of one-pot pastas for a long time. They are quick and easy, and make minimal mess because they only require one pot instead of the 4 I’m used to since everyone wants and needs something different when it comes to pasta. So this week, I decided to give my beloved one pot pasta a go with FAILSAFE friendly ingredients like chicken, gluten fee pasta, leeks and celery instead.

I’m happy to report that this one pot FAILSAFE pasta was a big hit.

It starts off with a safe oil like canola (or sunflower, safflower or rice bran) and some cubed chicken. Add in leeks and celery for some color and flavor. Top it off with your favorite gluten free noodles and then safe broth (I use the cooking liquid left from cooking chicken in the instant pot!) for extra deliciousness.

After all is said and done, you’ll have a super delicious meal on the table in under 30 minutes.

Who can ask for more!

A note about the pasta:

The only brand of gluten-free pasta that I’ve been able to tolerate so far is the Tinkyada brand organic brown rice pasta (I get a 12-oz bag of noodles for $4.99 in my grocery store). It’s made with brown rice and nothing else.

Other brands that I’ve tried and reacted to include Jovial Gluten-Free Pasta and Banza Chickpea Pasta.

All of that to say, use whatever brands work for you in this dish. But also know that if one doesn’t work, you should try another. They are all processed differently and could be made using different types of brown rice (jasmine, basmati, long gain brown) even when listing the same ingredient of “brown rice” on the package.

Description

Have your one pot pasta and eat it too with this FAILSAFE friendly version of the classic dish. Made with gluten-free pasta, chicken, leeks, and celery, this dish is as easy as it is delicious.

  1. Heat 1/4 cup of oil in a large sauté pan or skillet over medium heat. Add chicken and sauté until no longer pink on the outside.

  2. Add in leeks and celery and sauté for another 3-5 minutes or until vegetables are bright green.

  3. Add in pasta and broth and bring to a boil.

  4. Reduce heat to a simmer and cover, cooking for 2 minutes less than what the box says (I did 9-10 minutes for 12-14 minute cook window on the Tinkayada Organic Brown Rice Spirals that I used.)

  5. Adjust salt to your preference and serve!

I have yet to find a store-bought chicken (or vegetable) broth that works for a FAILSAFE/RPAH Elimination Diet. I end up making my own when I cook chicken in the instant pot. I always reserve the cooking liquid and freeze for another use.

This recipe is low salicylate, gluten free, nightshade free, dairy free, and FAILSAFE Friendly. It is also safe for the strict elimination phase of the RPAH Elimination Diet.
