There are definitely days when I curse how limited the choices are for ingredients and flavor combinations. It can definitely feel boring and repetitive after a few weeks (okay, days…). So whenever a meal is bursting with flavor, it takes me by surprise. That’s exactly how I felt about these maple garlic chicken thighs: surprised. And in the most pleasant of ways.
Every now and then I’ll take to Pinterest and just search for a specific ingredient to see if anything inspires me. When I went looking for maple garlic chicken recipes, most of them used ingredients like mustard, soy sauce, vinegar, and red pepper flakes. All delicious additions, I’m sure. Just not FAILSAFE. So I took the basic idea and ran with it, making this FAILSAFE version to enjoy over and over again.
Also, I know that the photo doesn’t exactly make this look appetizing. That’s what happens when I decide to use chicken thighs. They always look a little grey to me when they are cooked and I was too hungry to try and make the photo look a bit more appetizing.
Also, also. I found out AFTER making this meal that no one in my family loves chicken thighs (including me), so I’ll definitely be making this again with chicken breasts. I’m sure it would also make for a really wonderful chicken wing sauce, if that’s an option for you.

Preheat oven to 450°F/230°C for chicken thighs and 375°F/190°C for breasts. Place chicken in a large glass baking dish and set aside.

Combine remaining ingredients (oil, maple syrup, citric acid, garlic, and salt) in a small bowl or measuring cup and stir to combine. Pour over the chicken and let sit for 15-20 minutes.

Bake chicken for 20-30 minutes or until internal temperature reaches 165°F/75°C.
