Made from canned pears, this low salicylate marinade for flank steak is quick and easy and oh, so delicious.

Ingredients
  • 1/2 cup pear puree (see notes)
  • 1/2 teaspoon garlic (or 1 clove) (minced)
  • 1 1/2 teaspoon citric acid
  • 1 teaspoon salt
  • 2 tablespoons oil (canola, safflower, sunflower, rice bran oil)
  • 1-2 pound flank steak
Instructions
  1. In a large measuring cup or small bowl combine pear purée, garlic, citric acid, and salt.

  2. Place flank steak in a shallow baking dish or zip-top bag and pour marinade on top. Place in refrigerator and marinade for 15-30 minutes.

  3. Cook flank steak using your favorite method. (I broil mine in the oven on high for 7-8 minutes per side.) Let steak rest for 10 minutes before cutting.

Note

*To make pear puree, pour the contents of a 15-oz can of pears (make sure all ingredients are safe) into a blender cup and purée until smooth. 

This recipe low in salicylates as well as gluten free, dairy free, nightshade free. It is also safe for the FAILSAFE diet and the strict elimination phase of the RPAH elimination diet.
