Description

Sweet and sour chicken meatballs that are FAILSAFE and delicious?! Oh my. 

Ingredients
    For the meatballs:
  • 1 pound ground chicken
  • 1 teaspoon salt
  • 1 tablespoon FAILSAFE Dipping Sauce (see below)
  • 1 tablespoon green onions (chopped)
  • 1/2 teaspoon (1 clove) garlic (minced)
  • 1/ cup puffed rice cereal (ground into crumbs)
  • For the sauce:
  • 1/4 cup FAILSAFE Dipping Sauce (see below)
  • 1 teaspoon citric acid
  • 1/2 cup water
  • 1/2 teaspoon (1 clove) garlic (minced)
  • 1/4 teaspoon salt
  • 1 tablespoon corn starch + 2 tbsp water (to form a slurry)
Instructions
  1. Combine meatball ingredients in a medium sized mixing bowl and mix together with your hands until everything is evenly incorporated.
  2. Preheat air fryer to 350°F/180°C. (If you’d prefer to do it in the oven, preheat to 375°F/190°C.)

  3. Roll chicken mixture into 12-15 balls and place into the tray of your air fryer. Cook for 10-12 minutes, turning halfway. (If using an oven, bake for 25-30 minutes or until lightly browned on the outside and internal temperature reaches 160°F/75°C.)
  4. While the chicken is cooking, combine all sauce ingredients into a small sauce pan and bring to a simmer over medium heat. Allow to thicken, about 5-7 minutes. Remove from heat and set aside.
  5. Once meatballs are fully cooked, remove from the air fryer and place into sauce pan with sauce. Toss to coat.
  6. Serve with steamed rice and green beans, as a meatball sandwich with fried flatbread and some sautéed cabbage, or enjoy it as is!
