Have your one pot pasta and eat it too with this FAILSAFE friendly version of the classic dish. Made with gluten-free pasta, chicken, leeks, and celery, this dish is as easy as it is delicious.
Heat 1/4 cup of oil in a large sauté pan or skillet over medium heat. Add chicken and sauté until no longer pink on the outside.
Add in leeks and celery and sauté for another 3-5 minutes or until vegetables are bright green.
Add in pasta and broth and bring to a boil.
Reduce heat to a simmer and cover, cooking for 2 minutes less than what the box says (I did 9-10 minutes for 12-14 minute cook window on the Tinkayada Organic Brown Rice Spirals that I used.)
Adjust salt to your preference and serve!

I have yet to find a store-bought chicken (or vegetable) broth that works for a FAILSAFE/RPAH Elimination Diet. I end up making my own when I cook chicken in the instant pot. I always reserve the cooking liquid and freeze for another use.
